How is Khaar made?
Traditionally, the agent that brings in the khaar taste is made by burning the peels of a particular kind of banana, and then distilling the ashes. But the faster way is to use baking soda. Wherever he was, he would experiment with different kinds of bananas found in those places, roasting the peels to make khaar.

Khar is basically an alkaline extract from the ashes of burnt dried banana peels. The extract is used along with other vegetables to make a traditional Assamese khar dish. The most preferred banana for this is called ‘Bheem Kol’.

How is Khar made?
Natural Khar is prepared by filtering water through the ashes of pseudostem, corm and fruit skin of banana named Bhimkol in Assamese (a seeded banana variety). The parts of banana plant are dried under sun. Fully dried plant parts are burnt and the ashes are collected and filtered with water.
