Why do people read manga and then watch anime?

Anime tickles more of your senses (sound, sight, etc) than Manga. And there are more watchers than readers as that’s the cultural influence. It’s the opposite of JAPAN, where culturally more people seem to read Manga than watch anime. And more Japanese tend to enjoy reading more than Americans do.
